2 tablespoons olive oil
Salt to taste
1 medium yellow onion (chopped)
1/4 cup cilantro, finely chopped
2 cans diced tomatoes (14.5 oz) (or fresh)
1) Sauté onions in heated oil over medium heat, cooking until soft.
2) Add tomatoes (including juice) and salt.
3) Simmer until slightly thickened, about 10 minutes.
4) Add cilantro and simmer for 5 or 10 more minutes.
Serve over pasta, rice, or cooked vegetables.
